Icebear Posted November 26, 2015 Posted November 26, 2015 And there where 34°C and a high humidity like in the Philippines, and of course he didn't have a colder cellar to store. You would have spoiled milk in a day, no drinkable sour milk, when you do this here. And no, it'a a woman, who knows, most Filipinos have no idea of food and no knowledge about clean environment you need for. Such products are made for immediate consuming. That's why I never would buy this from them.
Tukaram (Tim) Posted November 26, 2015 Posted November 26, 2015 I had to google 'double cream' as I am unfamiliar with the term. Turns out on our side of the pond it is what we call heavy cream. The regular cream here is pretty light. For cooking it is easy to substitute - not sure about ice cream making, though. I have used Carnation evaporated milk (I suppose you could use another brand) 1 cup evap milk = 1 cup heavy cream. Or 3/4 cup milk with 1/3 cup butter = 1 cup heavy cream. Gently melt the butter, let it cool, mix with milk.
