After reading another thread I thought it might be nice to share some recipes. Open up those secret ingredient books and start sharing... To get Started:

Pork Sausage - med/high heat, 3/8” thick patty, 4 minutes per side
1 Kilo ground pork
2 tablespoons salt
1 tablespoon each (to taste) of ground pepper – thyme – garlic - cayenne pepper – basil – oregano – sage – parsley – onion powder - red chili flakes
 

Sausage Cheese Balls - 450F. 12-15 min
1 1/4 #s raw sausage (from above recipe)
1/2 cup finely sliced green onions
1/2 # shredded cheese (about 3 cups)
2 cups self-rising flour
2 tablespoons milk
* self-rising flour, sift 2 cups all-purpose flour, 1 Tbs baking powder, 1 tsp salt

Chicken Enchiladas - Chicken, seasoning, onion, pepper in a skillet. Serve in wrap with remaining ingredients to taste.
2 pounds Chicken Breast, cut up
1 package Taco Seasoning
1 Onion
1 Green Pepper
1 Sour Cream + ½ Jar Salsa + Shredded Cheese
Shredded Lettuce + Diced Tomatoes
1 Package Wraps
 

Gooey Butter Cake - 350° for 40 minutes
Cake: Yellow Cake mix, 1 Egg, ½ Stick Butter   
Filling: 8oz Cream Cheese, 2 Egg, ½ Stick Butter, Box Powdered Sugar
Use 'Cake' as a pie crust in a 8" x 8" pan, fill with 'Filling', line the edge with strip of aluminum foil so the 'crust' does not burn

On your first recipe it states 2 table spoons of salt are you sure on that measurement.Seems a bit much to me.Do you mean Teaspoons?

It has been a while since I made it.... if I would make it tomorrow I would use flat (not heaping) tablespoon as I converted it from pounds to 1 kilo of meat. You can certainly cut some salt though, its main purpose is to bring out the flavor in the meat which due to the quality here I might have increased when I typed it last year after finding a combo I liked.

Has anyone ever had pit BBQ? 

The kind where the meat is cooked underground overnight. 

I remember dad and his friends preparing large amounts of beef and barbequing it overnight for the next day, usually Saturday evening.. 

There is a certain recipe for doing this which includes seasoning and certain kinds of wood. 

The next day after church, the women would start cooking the other food while the men dug up the meat. 

The whole afternoon would be beer drinking and eating and finally a Poker game. I think there was a $5 limit and when that was gone you could not pull out more money.  it was all in fun and that is how I learned to play cards.

I love to remember that part of my childhood.
