Our family used citrus wood but mesquite wood is also very good. Mesquite is used in Texas BBQs. I've never had pork done this way. So, how did you like it? That evening we had the local equivalent of fine dining in a restaurant on piles in the middle of the mangroves. I remember dad and his friends preparing large amounts of beef and barbequing it overnight for the next day, usually Saturday evening.. There is a certain recipe for doing this which includes seasoning and certain kinds of wood. The next day after church, the women would start cooking the other food while the men dug up the meat. The whole afternoon would be beer drinking and eating and finally a Poker game. I think there was a $5 limit and when that was gone you could not pull out more money. it was all in fun and that is how I learned to play cards. I love to remember that part of my childhood.
