Tukaram (Tim) Posted January 28, 2019 Posted January 28, 2019 My wife says catfish are called mudfish, or hito. We see it fairly regularly in Iloilo. I don't like fish, especially catfish, so I have never tried it. Here is a pic from our local market. Is that them? I am only looking for dorado (mahi-mahi). They catch it around here but sell it elsewhere for more money (they say it is exported).

I find that Dorado has a neutral taste and can be quite dry.It is usually 260 a kilo here.

We would soak them in milk for a few hours before we would batter and fry them..good eating! As you probably already know Tilapia are the bottom feeders here that people like to eat. And they taste good.
